  1. 4 Piezas pollo al gusto
  2. Jugo de 2 limones
  3. 2 dientes ajo triturado
  4. Al gusto culantro (cilantro) picado
  5. 1 cebolla grande
  6. Al gusto sal, pimienta, orégano
  7. 4 cucharadas pasta de Ají Amarillo (ver en mi recetario)
  8. Para acompañar:
  9. 4 trozos yuca sancochada
  10. Opcional, 4 rodajas de choclo cocido

Instructions to make to make Ceviche Caliente de Pollo

  1. Lavar y secar las presas de pollo y agregarles 1 diente de ajo triturado, sal, pimienta, orégano y el jugo de 1 limón. Mezclar todo y reservar por una 1/2 hora para que el pollo vaya tomando sabor.
  2. Mientras tanto, poner a sancochar las yucas. Reservar cuando estén cocidas. Para que cocinen mejor, es bueno no agregarle sal, solo sancochar en agua y con la olla tapada a fuego moderado.
  3. Cortar 1/4 de la cebolla brunoise (cuadritos pequeños) para el aderezo y el resto en juliana no muy delgada. Picar el culantro bien finito.
  4. En una cacerola con un poco de aceite bien caliente, proceder a sellar las presas de pollo y luego retirarlas. En ese mismo aceite sofreír la cebolla en brunoise junto con el ajo, luego agregar la pasta de ají amarillo, seguido del culantro, moviendo todo a fuego moderado.
  5. Reincorporar la presas de pollo, junto con la cebolla en juliana y las alverjas. Agregar sal y pimienta al gusto y terminar de rociar el jugo del segundo limón. Mezclar bien y luego tapar la olla, dejando cocinar todo por unos 20 minutos o hasta que el pollo y las alverjas estén bien cocidas. Cocinar a fuego bajo para que no se seque el guiso y por el contrario, el pollo vaya soltando sus jugos.
  6. Verificar la sazón y queda listo para emplatar. Se acompaña bien con las yucas cocidas, también con arroz blanco y si se quiere algunas rodajas de choclo.
