- Lavar y cortar el mondongo, en tiras como se ve en la foto. En este caso, he usado el mondongo argentino que ya viene precocido, ya que el mondongo nacional viene crudo y hay que cocinarlo previamente con yerba buena, por lo menos una hora.
- Cortar la cebolla en brunoise, picar finamente el ajo, cortar la zanahoria en cubitos peque帽os.
- Asimismo, cortar las papas en cuadrados y picar la yerba Buena finita, lavar las alverjas.
- Una vez todo lavado y cortado, se procede a fre铆r el ajo y la cebolla en una sart茅n con un poco de aceite bien caliente. Seguido a帽adir el aj铆 amarillo y la sal, pimienta y el piment贸n. Cabe se帽alar que el mondongo normalmente lleva palillo, que le da el color amarillo, pero como a mi esposo no le gusta el sabor del palillo, yo lo cambio por un poco de piment贸n rojo.
- Mezclar y a帽adir a continuaci贸n la yerba buena, la zanahoria, las alverjas, las papas y por 煤ltimo el mondongo.
- Combinar todo y agregar 1/2 taza de agua, mezclar y tapar la olla. Dejar cocinar por unos 20 a 25 minutos a fuego moderado. Sacar del fuego cuando todo est茅 ya cocido.
- Proceder a servir. Se puede acompa帽ar con un poco de arroz blanco.
